Famous since 1901
The Moscato Passito di Saracena is the reason Luigi Viola started winemaking in 1999. After his retirement, Luigi was determined to put his village Saracena – in the middle of the Pollino national park – back on the map. The first accounts of this wine date back as far as the 16th century. And in 1901 it was described in the famous book By the Ionian Sea: “I remember only, as one of the few noteworthy things in Sybaris, a tasteful, white wine named Moscato di Saracena”.
Almost lost completely
This unique wine had almost completely disappeared, despite the fame it received throughout history. The reason for the fact that this wine was threatened with extinction is the enormously labor-intensive process behind the production of this wine. We have Luigi’s passion to thank that we are now still able to enjoy this amazing dessert wine.
First drying, then cooking
The Moscato Passito di Saracena, which is only produced in Saracena, is made from four organically grown grapes: Moscatello, Adduroca, white Guarnaccia and white Malvasia. The Moscatello and the Adduroca are harvested at the beginning of September and then hung to dry in bunches. Then, in the first ten days of October, the Guarnaccia and Malvasia are harvested and pressed into must, which is condensed in a boiling process.
Everything by hand
The dried Moscatello and Adduroca grapes are then hand-picked from the bunches, hand-pressed and added to the condensed must. Activated by the natural yeast of the dried grapes, the long fermentation process begins followed by a six-month maturation.
Love and passion
This method needs an incredible amount of love and passion. Moscato Passito di Saracena is a rare and unique wine. It is a wine that is not easily found outside of Calabria, and it is considered a treasure by wine enthusiasts and connoisseurs. This fantastic, amber-colored dessert wine has intense aromas of apricot, dried figs and candied orange peel. The flavor is sweet and intense with a long and persistent finish of peach, figs, and date. We are very grateful that Luigi dedicated his retirement to the salvation of this unique product.
