Olio Pata is a family-owned farm in the south of Calabria near Tropea. The business was founded by the Pata family in 1910, after which four generations of Patas passionately developed it into what it is today. Olio Pata combines the cultivation of olives with the pressing of the oil, throughout which the quality of the product is fully controlled.

Fourth genenation of Pata

The fourth generation of Patas consists of Pasquale and Renato with their wives Anna and Viviana. Although the brothers both did different studies with no link to agriculture, in the end they were attracted to come back to the beautiful Calabria and the olive oil business. Viviana passionately told us how they bring innovation and tradition together to produce fully organic oils with the utmost attention to quality.

Quality first

Several things are important to make good quality olive oil; the time between picking and pressing must be as short as possible, the olives must be cold and mechanically pressed and the origin of the olives must be fully controlled. This results in an olive oil with the lowest possible acidity, where the maximum to call an oil 'extra virgin' is 0.8%.

Controlling everything

At Pata these matters have the focus. Within four hours after picking, the olives are cold and mechanically pressed, with the harvest being fully controlled by Pata. Olio Pata does not buy their olives from third parties. All olives come from their own olive groves. This results in a fantastic olive oil with an acidity of around 0.3%.

Aromatic oils

In addition to traditional extra virgin olive oil, Olio Pata also produces special flavored extra virgin olive oils. Instead of mixing the oil with an aromatic additive, the aromatic products (e.g. basil, garlic, bergamot) are pressed together with the olives. A laborious process, in which the entire press must be cleaned after each flavor. A lot of work, but totally worth it. For example, try the rosemary oil over oven baked potatoes. Or give your dish a kick with the Habanero pepper oil. Or our personal favorite: enrich your salad with the basil oil. “Conventionally” flavored oils will not match the taste to the aromatized oils by Pata.
