Monopoli is a coastal town on the Adriatic Sea just below Bari. The town is a popular tourist destination and is primarily known for its baroque cathedral with its high clocktower and the fantastic fish restaurants next to the sea. In this town the Caroli family produces artisanal fresh and dried pasta made from local durum wheat.
Quality
Flour is mixed with water and kneaded into a dough at low temperatures. During kneading, gluten is formed from starch, proteins, and water, resulting in a supple dough. Then, depending on the specific pasta shape, the dough is either pressed through bronze dies or shaped by hand. The pasta varieties that we offer are all transformed into their shape by hand. The dough is rolled out into long “snakes”, after which they are cut into small pieces and shaped with a small knife (the nonna-knife).

Strozzapreti Tris is a celebration of color and flavor, featuring three distinct hues that evoke the natural beauty of Puglia. With its three colors—natural, tomato, and spinach—this pasta not only captivates the eyes but also tantalizes the taste buds.
Tomato: A light red that infuses the pasta with the sun-kissed sweetness of ripe tomatoes.
Spinach: A lush green that adds a fresh, earthy note to every bite.
Natural: A classic, warm ivory, created with pure flour and water.
Drying at low temperature
At Antica Masseria Caroli, crafting exceptional pasta is an art. Central to this artistry is the essential step of drying Strozzapreti Tris at low temperatures. This meticulous process preserves the pasta's vibrant colors, locking in the natural flavors and nutritional value of each ingredient. Low-temperature drying ensures that every mouthful of Strozzapreti Tris is a harmonious symphony of taste and texture, a feat that can only be achieved through small-scale production. Larger operations often compromise this delicate balance, but at our farm, every batch receives the utmost care and attention.
Adding color to tradition
Strozzapreti (priest stranglers) have a sinister name that refers to gluttonous priests from earlier times, who ate so much that they would choke on their pasta. This pasta shape can be found all over the South of Italy, although everywhere it has been given another name.. Crafted with love and care, Strozzapreti Condite pays homage to this iconic regional pasta, while adding the seven colors to make it really unique.
