The town is a popular tourist destination and is primarily known for its baroque cathedral with its high clocktower and the fantastic fish restaurants next to the sea. In this town the Caroli family produces artisanal fresh and dried pasta made from local durum wheat.

Seven different tastes and colors
What sets their Strozzapreti Condite apart is not just its exquisite taste but its vibrant, natural colors. Stefano Caroli has carefully selected seven unique ingredients to infuse into the pasta, creating a symphony of flavors and hues. To make this pasta you have to first produce all seven pasta colors seperately and then combine them in the pack. All individual flavors are added when kneeding the dough and each color represents a distinct flavor profile:
1️⃣ Spinach: A verdant green that delivers a fresh, earthy note.
2️⃣ Tomatoes: A ligh red that bursts with the sweetness of tomatoes.
3️⃣ Beetroot: A deep purple that offers a sweet and earthy undertone.

This gentle drying process ensures that each pasta retains its vibrant color and superb taste. Drying at low temperatures really sets small-scale pasta production appart from industrial pasta production. Drying is the most important step in the pasta production process, taking your time is essential.
Adding color to tradition
Strozzapreti (priest stranglers) have a sinister name that refers to gluttonous priests from earlier times, who ate so much that they would choke on their pasta. This pasta shape can be found all over the South of Italy, although everywhere it has been given another name.. Crafted with love and care, Strozzapreti Condite pays homage to this iconic regional pasta, while adding the seven colors to make it really unique.
