Etna as the core
In 1972, Salvatore Zumbo started an innovative viticulture project in Rovittello, a small village on the north side of Mount Etna. Here, he planted one of the first specialized vineyards on Mount Etna. Salvatore decided to plant grapes that had grown in these areas for centuries but were not used to their full potential.

1972
Settantadue (seventy-two) is named after the year that Salvatore, the grandfather of Erica and Ramona Zumbo, decided to plant traditional vines on the northern flank of Mount Etna. Settantadue is made from Carricante, a grape that is mainly cultivated on Mount Etna and has been growing there for over a thousand years. The Carricante is one of the most important grapes of Etna and is the basis of the Etna Bianco DOC, which must contain at least 60% Carricante. This Etna DOC is made 100% from Carricante grapes.
Delicate Carricante
Carricante grapes respond well to the temperature changes that are common at the high altitudes at which they grow. The grapes ripen slowly over a long season and are therefore picked late in October. The grapes grow at an altitude of about 750 meters on one of the prominent contrade (plots) of the Etna area: Contrada Santo Spirito.


Hand-picked
The harvest takes place in the first two weeks of October and is done by hand. When the grapes arrive at the winery, the bunches are selected by hand. The stalks are removed and the grapes are gently pressed. After 15 days of fermentation, the wine is first aged for six months on its own lees (sur lie). Then it is filtered and aged for another six months in steel tanks.
Minerals and fruit
It produces a wine with aromas of yellow fruit and a sweet-aromatic nose of blossom. The wine shows its true nature on the palate with a very pleasant juiciness and freshness complemented by a complex core, in which the minerals of Etna are clearly reflected. It is perfect to combine with grilled white fish with lemon, raw fish, and fennel.
