Unique DOCG dessert wine

When you say Puglia, you say Primitivo and when you say Primitivo, you say Manduria. Manduria is a small town in the North of the Salento region in central Puglia, close to the Ionian coast. This is the place where the best Primitivo wines come from. Traditionally, Primitivo grapes were mainly used to blend with wines grown in the North of Italy to give them more structure and body. Today however, Primitivo’s popularity is rising because of its unique taste.

Alberello

This Primitivo di Manduria Dolce Naturale DOCG is grown on 50 years old Alberello vines: : free-standing, little trees instead of hanging plants in rows like we see in most vineyards. 3000 years ago, this was the way to cultivate grapes. Today, it is still practiced in very specific places. The method is less efficient, but with Alberello the grapes are sheltered from direct sunlight by the canopy of the small tree. In sun-drenched Puglia this is not a luxury. By protecting the berries against scorching and premature ripening, the grapes are given more time to form sugars. This allows Erario to achieve higher alcohol content during the fermentation process, resulting in a full, structured wine.

Two harvests

Apart from the Alberello cultivation method, Erario also has a special harvesting method. The grapes are harvested in two rounds. First, the ripest grapes are harvested, while the less ripe grapes get a little bit more time to develop more sugars in the grape. This process makes it possible to create wines with higher alcohol content that are so famous the Manduria area. For this special appellation, the goal is not to create high alcohol contents, but rather to saturate the yeast before all sugar is transformed into alcohol. This leaves excess sugar in the wine that creates the sweetness in this very nice red dessert wine.

Temperature as the secret

By controlling the temperature strictly throughout the fermentation process, it is possible to control the fermentation at a specific alcohol to sugar ratio. To do so, the fermentation process needs to be stopped before all sugar is transformed into alcohol, leaving some residual sugar in the wine. This results in the unique sweet taste of the Primitivo di Manduria Dolce Naturale DOCG. This wine is a full-bodied, elegant, and sweet dessert wine with aromas of overripe fruits, sour cherries and forest fruits and a long and persistent finale. This wine is ideal in combination with desserts and old cheeses. A unique wine that everyone should have tried at least once.
