Pancetta of pink pigs
This Pancetta (pork belly) is made from pink pigs. These pigs are carefully selected by the Caroli family from a number of local farmers. When the pigs are three years old, they are slaughtered and processed into different types of meat products in the salumificio (charcuterie producer) run by Francesco.
The belly of the pig
After the pig has been slaughtered, it is divided into several pieces of meat. The belly of the pig is used for pancetta. Pancetta Arrotolata is rolled up pork belly that is first salted and then marinated in cooked wine. Then, the pork belly is hung in a smoking room where it is lightly smoked with oak bark and almond peel. Finally, the pork belly is rolled up in a natural intestine and dried for four months.
Delicate
The result is a particularly delicate pancetta with a soft and round taste. The natural smoking process adds aromas of oak bark and almond peel, making this pancetta truly unique. Everything is artisanal and done by hand. Not a single part of the process is automated because, as Francesco proudly explains, he wants to be on top of every part of the process. Quantity is not important here, only quality counts. This philosophy means that the Carolis have become part of the Slow Food movement that is getting more and more attention in Italy.
Endless combinations
This pancetta is delicious in a pasta all'Amatriciana, but also in combination with buffalo mozzarella (bocconcini di mozzarella con pancetta) or – less Italian, but just as tasty – combine your white asparagus with pancetta instead of ham. Because even uncooked, this pancetta is a fantastic taste experience!
