Monopoli is a coastal town on the Adriatic Sea just below Bari. The town is a popular tourist destination and is primarily known for its baroque cathedral with its high clocktower and the fantastic fish restaurants next to the sea. In this town the Caroli family produces artisanal fresh and dried pasta made from local durum wheat.
Quality in every step
At Antica Masseria Caroli, they believe that true artistry lies in the details. They take pride in their small-scale production methods, allowing them to focus on every batch's quality. Every production step is visually controlled to ensure the highest possible quality. Their Orecchiette Condite is made with precision and passion, ensuring a taste that's simply unparalleled.
Seven different tastes and colors
What sets their Orecchiette Condite apart is not just its exquisite taste but its vibrant, natural colors. Stefano Caroli has carefully selected seven unique ingredients to infuse into the pasta, creating a symphony of flavors and hues. To make this pasta you have to first produce all seven pasta colors seperately and then combine them in the pack. All individual flavors are added when kneeding the dough and each color represents a distinct flavor profile:
1️⃣ Spinach: A verdant green that delivers a fresh, earthy note.
2️⃣ Tomatoes: A ligh red that bursts with the sweetness of tomatoes.
3️⃣ Beetroot: A deep purple that offers a sweet and earthy undertone.
4️⃣ Squid Ink: An inky black that brings the taste of the sea
5️⃣ Turmeric: A warm, golden yellow with a hint of spice.
6️⃣ Porcini : A warm brown that imparts a hearty, umami-rich flavor.
7️⃣ Natural: A classic white
Drying at low temperature
To preserve the delicate flavors and nutritional value of their ingredients, Antica Masseria Caroli meticulously dries their Orecchiette Condite at low temperatures. This gentle drying process ensures that each pasta retains its vibrant color and superb taste. Drying at low temperatures really sets small-scale pasta production appart from industrial pasta production. Drying is the most important step in the pasta production process, taking your time is essential.
Adding color to tradition
Orecchiette, which translates to "little ears," are the traditional pasta shape of Puglia. Crafted with love and care, Orecchiette Condite pays homage to this iconic regional pasta, while adding the seven colors to make it really unique.
