Founding father Nonò
Nonò, named after Leonardo’s father, has all the traits of his namesake: powerful and passionate, but kind and balanced. Thanks to Nonò (Onofrio), the Costantino family now makes wine. His passion for traditional cultivation methods and high quality is not only present in this wine, but in all wines from Costantino.
High temperatures
Nonò is made from 60% Petit Verdot and 40% Cabernet Sauvignon. The Petit Verdot is originally a French grape from the Pyrenees and was mainly used in Bordeaux wines. This grape is extremely sensitive and has a low yield. Because of the complexity and risks, the grape is used less and less in France. However, its unique flavor has inspired winemakers in areas with higher temperatures to work with this grape. This grape can make the difference between a good and a great wine.
Late harvest
The Cabernet Sauvignon also originates from the French Pyrenees. This grape is widely used all over the world and gives a full flavor and dark color. The taste of the Cabernet Sauvignon grape is strongly influenced by the time of harvest. Cabernet Sauvignon grapes that are harvested relatively late, as is the case with the Nonò, give a jam-like cassis flavor to the wine. Leonardo picks his Petit Verdot and Cabernet Sauvignon in the first ten days of October, after which the grapes ferment for 15 days in a steel tank. Then the wine is transferred to tonneau (large oak barrels of approx. 600L) in which it matures for six months.
Oak tonneau
This organically grown wine is complex, with a nose of red fruit, spices, and chocolate. The palate is smooth and balanced with soft tannins. You can taste the clear elements of the Cabernet Sauvignon (jam, cassis) in combination with the spicy, full flavor of the Petit Verdot. The wine is ideal with roasts, grilled meat, game, and aged cheese.
