The main act for the Nero di Troia
The Nero di Troia, although somewhat unknown outside of Italy, is the most characteristic grape of the North of Puglia. This native grape derives its name from the small village of Troia, not far from the wine cellars of Antica Enotria. That is why the owner, Luigi, has given this grape the leading role in his repertoire.
The pure taste of Nero di Troia
Because traditionally the Nero di Troia is rich in tannins, it is often used in blends with other varieties. In recent years a trend is picking up in which winemakers in the north of Puglia pay more attention to their heritage. This has led to the creation of this unique wine. Luigi believes that by not blending his grapes, he is better able to understand the specific characteristics of the soil and the grape and how they transform into his wines.
Culture and tradition
Luigi pays a lot of attention to culture and tradition. This is why all his wines are produced organically. The grapes are picked by hand and the fermentation is natural. This means that no yeast is added to start the fermentation process. Furthermore, all stems are carefully separated from the grapes before pressing to avoid woody tannins in the wine.
Organic with oak
After the fermentation process, this organic Nero di Troia first matures in stainless steel tanks for twelve months and subsequently for twelve months in oak barrels. This wine embodies the land from which it was born, showcasing a strong deep-red color with purple reflections and elegant aromas of ripe fruits and spices. It is a soft, smooth wine with the right freshness and persistent long finish with an edge of tannin. This wine pairs beautifully with pasta dishes with truffle or roasted pork with Mediterranean herbs.
