Coratina
Coratina olives are known for their expressive flavor profile, resulting in an oil that is rich, powerful, and intense. Coratina olive oil has a deep green color and a powerful, penetrating aroma reminiscent of fresh herbs, green tomatoes, and artichokes. On the palate, it offers a powerful, bitter taste with a distinct peppery finish. Coratina is often used as a finishing touch to add depth and complexity to dishes. It can enhance the flavors of roasted vegetables, grilled meats, and hearty pasta dishes, making it a favorite among those who appreciate a stronger olive oil; it is indeed one of the strongest in the world. Cerasuola
Cerasuola olives, native to Puglia, produce an olive oil with a unique flavor profile that sets it apart from other varieties. Cerasuola is also known as "the red olive," hence the name, which means "cherry" in Italian, referring to the cherry-red stage of the olive during ripening on the tree. This oil has a striking color, deep and vibrant green. The oil's aroma is intensely fruity and grassy, with a hint of freshly cut herbs. Leccino

Organically Grown
While Stefano's olive oil is not formally certified as organic, the olives are organically grown. The process of obtaining the 'Organic' certificate in South Italy can be time-consuming and bureaucratic. Therefore, we cannot place an official organic sticker on our bottles, but rest assured: Stefano Caroli would never use chemicals in his orchard and jeopardize the quality of his olive oil. His commitment to purity and craftsmanship always comes first.
