Oil from the beautiful Val d'Itria

Antica Masseria Caroli is a family farm located in Martina Franca, a small town at the center of the Val d’Itria valley in Puglia. The valley is famous for its three-foot-tall white limestone walls and its characteristic Trulli, small white agricultural buildings with gray conically shaped roofs. Both the walls and the Trulli are built completely without cement and are held together purely by the design of the construction.

Artisanal oil since 1984

Here, in this beautiful setting, Stefano Caroli has been producing different types of olive oil since 1984. Apart from its beauty, the Val d’Itria possesses the ideal conditions for the production of high-quality olive oil. The valley’s microclimate with her cool winds and many hours of sunshine in combination with a strict focus on craft and quality, proves to be the ideal situation for the olive trees. The olives are pressed within twelve hours of the harvest and the pressing is done at a low temperature resulting in a low level of acidity which is important for a good extra virgin olive oil.

Leccino monocultivar

The Leccino monocultivar has a mild bitterness and average spiciness and fruitiness while showing distinct hints of fresh almonds and grass. All olives are hand-picked and pressed within eight hours after harvesting. The result is a well-balanced with a very low acidity level of 0.35%. When you are looking for a stronger monocultivar olive oil, you could choose the Cerasuola, or the more bitter Coratina.

Organic

Although the Carolis have only recently applied for official organic certification, all olives are grown organically. The process of receiving “organic” certification in Italy is tedious and slow, bureaucratic, and expensive. Therefore, there is no official label on the tin, but Stefano would never use chemicals on his plants and jeopardize the quality of his oils!
