Mother Clara
La Clara is an ode to the mother of the Pacelli family. You can recognize her liveliness and sense of humor in this wine. La Clara, an orange wine with a light bubble, is created from the Trebbiano Toscano grape. This is another reference to Clara Pacelli, who is not originally from the Calabria region. The type of wine is called orange because it is made from white grape must that has been in contact with the skins for a prolonged period. This turns the wine orange.
Metodo Ancestrale
La Clara is a sparkling wine created in the ancestral method. Until recently, this method was rarely used. In the methode ancestrale, unlike with the Champaign method, no sugar and yeast is added to the wine. The fermentation process in the tank is stopped by lowering the temperatures (this used to happen naturally due to the approaching winter season), after which the fermentation continues in the bottle. In the bottle, the carbon dioxide created by the fermentation has nowhere to go. The bubble therefore remains inside, creating a sparkling wine.
Pacelli women
This wine, produced by a strong team of Pacelli women, is organically grown. In this small but promising vineyard in the north of Calabria, a lot is still done by hand. The best grapes are carefully selected and vinified under the strict watchful eye of mother Clara and her daughters. The passion that goes with it yields the award-winning wines of Tenute Pacelli.
Orange lust
This beautiful organic orange wine has a fresh and lively character. It is an extraordinary wine because of the choices made throughout the vinification process, but it is not a very complex frizzante. The wine is floral in the nose and has notes of apple and raspberry. The bubble is light and elegant and lends itself perfectly for an aperitif at nightfall on a long hot summer’s day.
