The biggest olives

The Bella di Cerignola DOP La Bella della Daunia olives are known as the largest table olives in the world. Not only in name quite the mouthful. It is unsure where the olives originated. There are those who say they are equivalent to the "Orchite" olives of Roman antiquity, while others claim that they were brought to Italy by the Spaniards in the 14th century. One thing is for sure, today they are only found in the area around the town of Cerignola.

DOP and GGG

The Bella di Cerignola olives received their European DOP status in 2000, recognizing them for their quality and uniqueness. Only the best and largest olives can get the DOP status and within the DOP there is again a subdivision between G, GG, GGG, with GGG being the largest and best quality olives.

Hand-picked

The olives are picked at the beginning of October. All olives are picked by hand to prevent damage. Then, the olives are taken to the cooperativa where they are carefully selected and sorted by size and ripeness. The black olives are the ripest olives and are treated according to the Californian method.

Californian method

The Californian method consists of brining the olives in salted water for a minimum of 30 days. Then, the olives are briefly placed in a bath with a sodium solution to soften. Afterwards they are carefully washed and oxidized by blowing air bubbles under high pressure into the olive bath. This oxidation process causes the olive to turn black. Finally, the color is fixed by a solution of iron glucose after which they are immediately packed in glass jars.

Delicate and sweet

The black olives from the La Bella di Cerignola cooperativa are delicate in taste with a good bite, slightly softer and slightly sweeter than the green variety. Perfect for accompanying an aperitif. You can store these olives for at least 3 years, making it an ideal product with which to stock your pantry!
