The biggest olives
The Bella di Cerignola DOP La Bella della Daunia olives are known as the largest table olives in the world. Not only in name quite the mouthful. It is unsure where the olives originated. There are those who say they are equivalent to the "Orchite" olives of Roman antiquity, while others claim that they were brought to Italy by the Spaniards in the 14th century. One thing is for sure, today they are only found in the area around the town of Cerignola.
DOP and GGG
The Bella di Cerignola olives received their European DOP status in 2000, recognizing them for their quality and uniqueness. Only the best and largest olives can get the DOP status and within the DOP there is again a subdivision between G, GG, GGG, with GGG being the largest and best quality olives.
Hand-picked
The olives are picked at the beginning of October. All olives are picked by hand to prevent damage. Then, the olives are taken to the cooperativa where they are carefully selected and sorted by size and ripeness. The green olives are the least ripe olives and are treated according to the Sevillian method.
Sevillian method
The Sevillian method consists of soaking the olives in a sodium solution for eight to 15 hours, depending on the ripeness and size of the olive. This removes the bitterness of the relatively unripe green olive. Then the olives are washed several times after which they are brined for a minimum of 30 days in salted water so that the olive softens and develops its characteristic green color and delicate taste. Finally, the olives are packed in glass jars.
