Although the Fiano is a grape that you will mainly find in the Campania region, there are also vineyards in the north of Puglia that grow this white grape. The Fiano is not one of the most well-known Italian grape varieties, like for example Pinot Grigio, but this grape has a long history within the region. Furthermore, the Fiano is often blended with other varieties like Chardonnay, which contributes to anonymity. Despite all this, the Fiano is a unique grape that produces amazing white wines, including this 100% Fiano from Antica Enotria.
Pure taste of Fiano
Because Luigi, the owner of Antica Enotria, does not blend his Fiano grapes with other varieties, he is better able to understand which factors in the vinification process affect certain taste elements. After the fermentation process the wine is matured for six months in steel tanks, resting upon its own lees. Every once in a while the wine is stirred. This process is called “batonage” and creates a complex unique wine.
Culture and tradition
Luigi pays a lot of attention to culture and tradition. This is why all his wines are produced organically. The grapes are picked by hand and the fermentation is natural. This means that no yeast is added to start the fermentation process. Furthermore, all stems are carefully separated from the grapes before pressing to avoid woody tannins in the wine.
6 months of maturation
The result is an organic wine with an intense yellow color and aromas of yellow flowers, peach, and candied oranges. The taste is round and full-bodied with subtle hints of citrus. Creamy chicken dishes or pasta with pork pair well with this Fiano, but it is also extremely suitable to drink with various fish dishes and soups.
