Passito di Moscato
The Cori is a special Passito di Moscato dessert wine. After a full evening of learning about the Costantino wines and tasting them, Cori was an amazing conclusion. It is a wine made in a very special way and the pride of Leonardo. The method has been perfected by Leonardo after much experimentation and the result is impressive!
First drying on the plant
The grapes undergo a first drying on the plant. Then, they are picked by hand and brought to the cellar. There, the bunches are carefully selected and hung on specially designed racks for further drying. When the grapes have reached the ideal conditions, they are removed one by one from their bunches by hand. By this stage, the grapes have turned into raisins.
Raisins
The raisins are rehydrated for 40-50 days in the muscat wine of the same grapes that, without the drying process, have now been turned into wine through a vinification process at a cool temperature of 14 degrees Celsius. After this process, the mixture of muscat wine and raisins is pressed by hand and transferred to 500 liter oak barrels to mature for 60 days.
Labor-intensive
This extremely labor-intensive process produces a golden yellow dessert wine with a dominating sweet nose of honey, enhanced with an extensive bouquet of spices ranging from chamomile to cardamom. In the mouth, the wine has a palette of dried fruit and raisins, with clear apricot, but there are also characteristics of tobacco and baked puff pastry. Yet this wine remains smooth and fresh with a subtle touch of citrus.
