From the beautiful Val d'Itria valley

Antica Masseria Caroli is a family farm located in Martina Franca, a small town at the center of the Val d’Itria valley in Puglia. The valley is famous for its three-foot-tall white limestone walls and its characteristic Trulli, small white agricultural buildings with gray conically shaped roofs. Both the walls and the Trulli are built completely without cement and are held together purely by the design of the construction.

Artisanal olive oil since 1984

Here, in this beautiful setting, Stefano Caroli has been producing different types of olive oil since 1984. Apart from its beauty, the Val d’Itria possesses the ideal conditions for the production of high-quality olive oil. The valley’s microclimate with her cool winds and many hours of sunshine in combination with a strict focus on craft and quality, proves to be the ideal situation for the olive trees. The olives are pressed within twelve hours of the harvest and the pressing is done at a low temperature resulting in a low level of acidity which is important for a good extra virgin olive oil.

Coratina, Cerasuola and Leccino

Stefano’s Classico blend is a combination of Coratina, Cerasuola and Leccino olives. The Coratina, the most well-known olive variety in Puglia, has a characteristic bitter taste with strong aromas of freshly harvested almonds and artichoke. These strong flavors are balanced by the milder Cerasuola and Leccino varieties. Cerasuola olives are native to the Val d’Itria, making Classico a characteristic oil from this region.

Organic with low acidity level

Although the Carolis have only recently applied for official organic certification, all olives are grown organically. The process of receiving “organic” certification in Italy is tedious and slow, bureaucratic, and expensive. Therefore, there is no official label on the tin, but Stefano will never use chemicals on his plants or use additives in his oils. He believes that this harms the quality of his oils, and we strongly agree. The result is a balanced extra virgin olive oil of very high quality and a low acidity level. Acidity level is the most important criterion to judge the quality of olive oil. This Classico has a low acidity level of 0.4% and therefore deserves its place on our platform!
