Artisanal and slow dried

Monopoli is a coastal town on the Adriatic Sea just below Bari. The town is a popular tourist destination and is primarily known for its baroque cathedral with its high clocktower and the fantastic fish restaurants next to the sea. In this town the Caroli family produces artisanal fresh and dried pasta made from local durum wheat.

Quality

Flour is mixed with water and kneaded into a dough at low temperatures. During kneading, gluten is formed from starch, proteins, and water, resulting in a supple dough. Then, depending on the specific pasta shape, the dough is either pressed through bronze dies or shaped by hand. The pasta varieties that we offer are all transformed into their shape by hand. The dough is rolled out into long “snakes”, after which they are cut into small pieces and shaped with a small knife (the nonna-knife).

Drying at low temperature

After shaping the pasta, it is dried at low temperatures. The drying is the most crucial phase in the pasta making process. In general, the slower the pasta is dried, the better the result will be. This is where the difference is made between small-scale production and large industrialized production. Mass producers will dry as quickly as possible for efficiency. For the Carolis this is never an option because quality is important.

Cavatelli

Cavatelli (small holes) are small, rolled pasta shapes. In terms of shape, they are similar to Gnocchi, but Cavatelli are made like other pastas, with just semolina flour and water. In the region of the Caroli family Cavatelli are made by dragging three fingers over a small piece of dough. The middle finger drags over the dough and the adjacent two fingers determine the shape of the pasta. Cavatelli are often combined with vegetables like broccoli rabe, but they are also often used with recipes containing ricotta.

Puglian varieties

You can order this pasta in packages of eight packs of 500g that you can combine with other pasta shapes by the Caroli family: Orecchiette, Strascinate, Strozzapreti and Foglie d’Ulivo. You can combine whatever you like. Of course, if you are fond of Cavatelli, you can also just buy eight packs of Cavatelli.
