Typical Sycilian
The Grillo is a typical grape found on Sicily. To us, it was described by Costantino's owner, Leonardo, as a cross between the fresh Catarratto and the full, aromatic Zibibbo (a type of Muscat grape from Egypt). The origin of the grape is unclear, but one thing is certain, the Grillo is built to withstand the hot, dry climate of Sicily.

So much more than Marsala
The Grillo is traditionally used in Sicily's famous fortified wine, Marsala. Today, Marsala is no longer very popular, and the grape is used to make delicious Sicilian wines. Now, it is a highly praised grape from the South. This all happened because a few small, hard-working, organic winemakers in Western Sicily have started to focus on this variety. A wine connoisseur once told us “You should see the Grillo as a fuller, somewhat funky alternative to a Pinot Grigio”.
Organic... naturally!
Aria Grillo, like all Costantino wines, is an organically produced wine. Leonardo explains to us that to him, this is the only way to make wine. He compares using chemicals in farming to taking medication for the body. At a certain point, the body can no longer function without it, he says. And that, obviously, isn’t very good. Add to that Leonardo’s sulfite intolerance and this explains his great passion for organic wines low on sulfites, without unnecessary additives.


DOC
This wine is the only wine from Costantino with the DOC label. Aria Grillo is lively and bright, with a straw-yellow color. The aromatic characteristics of the grape give the wine notes of honey on the nose. In the mouth the wine is floral with peach. Drink this wine with the typical Sicilian dish of fish with couscous or a risotto with porcini mushrooms.
