Pasta from Puglia
In the south of Italy, including Puglia, pasta is almost always made without egg. With only water and wheat, a whole range of pasta shapes are made, each suited to different types of sauces. Traditionally, the choice to omit egg was based on economic considerations, but that is no longer the case.
Puglia is known for its Orecchiette (ear-shaped pasta), which you see everywhere, especially in Bari. The streets are lined with small tables where Nonnas (grandmothers) let their freshly made Orecchiette dry in the Pugliese sun. Our pasta comes from Monopoli, a beautiful coastal town some 40 kilometers from Bari. Here, in addition to Orecchiette, an endless number of different pasta shapes are produced in a traditional way.
