Olive oil, next to tourism, is the region's main source of income. Much of the oil produced here is used by the big brands in the north to make the bulk olive oil you find in the supermarket. However, you don't have to look long and hard to find real quality.

In recent years, many local farmers have switched from producing for the north to a greater focus on quality. Thanks to the huge variety in olive, there are thousands of different flavor profiles to be found. How do you find the best then? By tasting a lot. The Caroli family came across our path in our search for the Capocollo, but we found they make exquisite olive oil too!
