Charcuterie from Puglia

You will find local specialties in the field of cold cuts all over Italy. Just as Parma is known for its Parma ham, Puglia is known for its Capocollo, in particular the Capocollo di Martina Franca. We went looking for this local specialty and found one to make your mouth water.

The Caroli family has its own farm with black pigs, who enjoy a wonderful life among the olive trees. Of course, the Caroli family doesn't only make Capocollo; the shoulder and neck are processed into Capocollo, the belly into Pancetta, the cheek into Guanciale, everything from the pig is processed into delicious cuts of meat. Besides black pigs, pink pigs are also processed into delicacies. Worth it every single time!
